Grease trap cleaning is the process of removing grease and grime from kitchen exhaust systems, filters, fans and ducts. Commercial cooking establishments are required by law to have their hoods cleaned regularly to reduce fire risks and promote cleaner air quality for staff and customers. The cleaning process involves many steps that take 3-4 hours from start to finish.
Step 1 – Initial Inspection
A certified hood cleaning technician inspects all surfaces of the kitchen exhaust system. He/she will note the location of grease traps, exhaust fan and duct work and their condition. They will also test all the fans for noise, vibration and functioning.
Step 2 – Caustic Chemicals
Once the initial inspection is completed, the hood cleaning team begins spraying food-safe caustic chemicals onto the hood and all other surfaces of the hood exhaust system. These chemicals are allowed to sit for a set amount of time and then are washed off with hot water at high pressure.
Step 3 – Scraping
If the grease build-up is extensive, a scraper may be needed to remove the bulk of it. This will be done under close supervision to prevent any damage to the kitchen hood system.
Step 4 – Duct Washing
After the caustic chemicals and scraping are finished, hot water pressure washing is used to rinse away any remaining grease from the surfaces of the hood, exhaust system, ducts, and fans. This is a critical step in the process that helps ensure that all surfaces are completely clean and free of any residual grease and cleaning solution.
